The role of yeast in beer has always been a topic of interest. Yeast is a single-celled microorganism that consumes sugars like maltose, glucose, fructose, sucrose, maltotriose, and dextrin. As a result, these sugars are converted into carbon dioxide, ethyl alcohol, and other by-products of fermentation. Fermentation is a process in which microorganisms such as fungi and bacteria convert organic substances into energy.



During fermentation, yeast consumes carbohydrates as its food source. The yeast cells produce ethanol and CO2 by consuming cereal-derived sugars. Spontaneously, hundreds of secondary metabolites that influence the aroma and taste of beer are produced. The difference in these metabolites due to different yeast strains is what allows yeast to influence beer flavour so uniquely. While most breweries use pure yeast cultures for fermentation, some speciality beers now use spontaneous or mixed fermentation.

Yeasts grow in dextrose-containing culture media. They are easily distinguished from most bacteria due to their larger size and morphological characteristics. MYGP Agar with Copper is used in the brewing industry for the isolation and cultivation of wild yeasts.

Principle of MGYP Agar

MGYP agar is a source of Malt extract, Glucose, Yeast extract, and Peptone. Malt extract and yeast extract provide the necessary nutrients to support the growth of yeasts. Dextrose (glucose) is an ideal carbohydrate for yeast growth. The acidic pH in the medium inhibits the growth of bacteria and favours the growth of yeasts. This medium is used for testing the quality of beers in the brewery industry.

Instructions For Use of the TM Media Dehydrated MGYP Medium

  • In 1000 mL of distilled water, dissolve 41.0 grammes of MGYP medium.
  • Bring the medium to a boil to completely dissolve it.
  • Sterilize by autoclaving at 15 psi (121°C) for 15 minutes.
  • Cool to 45–50 °C.
  • Mix well and pour into sterile Petri plates.
